Olie<br>1 tl. mosterd<br>2 tl. rode wijn azijn<br>1 flesje trappist<br>1 el. boter<br>1 el. arachideolie<br>2 teentjes knoflook<br>1 grote ui gesnipperd<br>6 middelgrote trostomaten<br>6 takjes tijm<br>Cognac<br><br>Meng de stroop met de mosterd, de azijn en twee el. bier, bestrooi het vlees ruim met zout &amp; peper en masseer het vlees goed door de marinade. Dek af met vershoudfolie en laat minimaal een uur of 4 in de koelkast staan (een hele nacht is nog veel beter). Verhit de oven voor op 100 graden Doe de boter met de olie in een braadpan en schroei de stukjes vlees op een hoog vuur tot ze goudbruin zijn. Voeg nu de gesnipperde knoflook, ui en de in vieren gesneden tomaatjes toe en bak 3 tot 4 minuten mee. Voeg de rest van het bier toe en doe alles over in een ovenschaal. Zet deze afgedekt ca. 4 uur in de oven en laat het vlees mooi garen. Neem het vlees uit de schaal en zet apart. Pureer de saus met een staafmixer en doe er een scheutje cognac bij om vervolgens de saus wat te binden met een papje van bloem. doe het vlees terug en laat nog een minuutje of wat in de saus sudderen. Serveer met aardappeltjes in de schil of aardappelpuree en bijv. rode bietjes met ui.
