Ris de blaadjes van 3 takjes tijm. Smelt de boter in een ruime hapjespan en bak de fazantfilets op middelhoog vuur in 3 min. rondom bruin. Neem uit de pan en laat rusten onder zilverpapier. Snij ondertussen de bleekselderij in dunne boogjes en halveer eventuele grote paddenstoelen. Voeg de bleekselderij, tijm, bloem en paddenstoelen toe aan het achtergebleven bakvet en bak 1 min. op middelhoog vuur. Schep regelmatig om en breng op smaak met peper en een snufje zout. Schenk de sherry erbij, roer door en voeg na 1 min. de slagroom toe. Breng aan de kook. Draai het vuur laag, leg de fazantfilets in de pan en stoof met de deksel op de pan 6 &#8211; 8 min. op laag vuur.
