Peper en zout de kwartels. Braadt de kwartels in enkele minuten om en om tot ze mooi bruin zijn in de braadpan. Haal de kwartels uit de pan. Voeg nu de spekblokjes, bospaddenstoelen, knoflook, sjalot, wortel, bleekselderij in dunne stukjes gesneden, tijm en het laurierblad toe en braad het geheel aan. Temper het vuur en leg de kwartels boven op het mengsel, met de deksel schuin op de pan. Braad onder regelmatig draaien en bedruipen de kwartels in 15 min. heerlijk gaar. Haal na de braadtijd de kwartels uit de pan.
