Zet het vuur uit en laat een kwartier rusten. Week de gelatine 5 minuten in een ruim koud water. Los 50 gram van de suiker op in de nog warme room. Knijp de gelatine uit en laat ook deze al roerend oplossen in de room. Meng de karnemelk door het slagroommengsel en verdeel deze vloeistof over de vormpjes (glaasjes of bakjes). Dek af met vershoudfolie en zet de puddinkjes minimaal 4 uur in de koelkast om op te stijven.
