{"id":412,"date":"2023-11-20T11:23:13","date_gmt":"2023-11-20T11:23:13","guid":{"rendered":"https:\/\/cookingpleasure.nl\/?p=412"},"modified":"2023-12-06T15:24:58","modified_gmt":"2023-12-06T15:24:58","slug":"risotto-met-rucola-en-coquilles","status":"publish","type":"post","link":"https:\/\/cookingpleasure.nl\/?p=412","title":{"rendered":"Risotto met rucola en coquilles"},"content":{"rendered":"\n<p>INGREDI\u00cbNTEN<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>75 gr. rucola <\/li>\n\n\n\n<li>1 teentje knoflook <\/li>\n\n\n\n<li>1 el. pijnboompitten <\/li>\n\n\n\n<li>75 ml. olijfolie extra vierge <\/li>\n\n\n\n<li>3 el. geraspte parmezaanse kaas<\/li>\n\n\n\n<li>2 coquilles <\/li>\n\n\n\n<li>1 sjalotje <\/li>\n\n\n\n<li>300 gr. risottorijst <\/li>\n\n\n\n<li>100 ml. droge wittewijn <\/li>\n\n\n\n<li>900 ml. groentebouillon <\/li>\n\n\n\n<li>4 el. cr\u00e8me fraiche <\/li>\n\n\n\n<li>sap en rasp van 1 citroen<\/li>\n\n\n\n<li>kerstomaatjes<\/li>\n<\/ul>\n\n\n\n<p>Pureer met een staafmixer de helft van de rucola met de knoflook, olijfolie en de pijnboompitten tot een smeu\u00efge massa. Roer de Parmezaanse kaas erdoor en breng de pesto op smaak met zout &amp; peper. Doe 2 el. olie in een hapjespan en fruit hierin de gesnipperde sjalot, schep de rijst erdoor en bak tot de korrels glanzend zijn. Schenk de wijn erbij en Iaat de rijst dit zachtjes kokend opnemen. Voeg nu de bouillon in drie of 4 stappen toe zodat de rijst iedere keer voldoende opneemt en laat de rijst zo&#8217;n 20 minuten garen. Neem de risotto van het vuur en roer er de citroenrasp, het sap en de cr\u00e8me fr\u00e2iche er doorheen en voeg peper naar smaak toe.
