{"id":420,"date":"2023-11-20T13:03:53","date_gmt":"2023-11-20T13:03:53","guid":{"rendered":"https:\/\/cookingpleasure.nl\/?p=420"},"modified":"2024-01-05T11:39:43","modified_gmt":"2024-01-05T11:39:43","slug":"courgette-caponata-met-tijm-en-kipfilet","status":"publish","type":"post","link":"https:\/\/cookingpleasure.nl\/?p=420","title":{"rendered":"Courgette Caponata met tijm en kipfilet"},"content":{"rendered":"\n<p>INGREDI\u00cbNTEN<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>4 kipfilets <\/li>\n\n\n\n<li>4 teentjes knoflook <\/li>\n\n\n\n<li>2 rode uien <\/li>\n\n\n\n<li>3 selderij stengels <\/li>\n\n\n\n<li>4 courgettes <\/li>\n\n\n\n<li>1 blik tomatenblokjes <\/li>\n\n\n\n<li>400gr. <\/li>\n\n\n\n<li>2 tl. kappertjes <\/li>\n\n\n\n<li>1 el. wijnazijn <\/li>\n\n\n\n<li>3 el. rozijntjes <\/li>\n\n\n\n<li>8 takjes tijm<\/li>\n\n\n\n<li>olijfolie<\/li>\n<\/ul>\n\n\n\n<p>Verwarm een el. olijfolie met een klein klontje boter in een wok of braadpan en bak hierin de gesnipperde ui en de selderij die in diagonale stukken is gesneden zo&#8217;n 10 min. Voeg nu de in blokjes gesneden courgettes en de fijngehakte knoflook toe en laat een minuutje of 3 meebakken. Voeg nu de blokjes tomaat, 200 ml. water, de kappertjes, wijnazijn en de rozijntjes toe, breng op smaak met wat zout, leg hierop de takjes tijm en laat zo&#8217;n 20 minuten sudderen met de deksel iets schuin op de pan zodat het geheel wat inkookt. Verwijder de takjes tijm na het koken! Snijdt de kipfilets open (als een boek) bedek ze met folie en plet ze met een hakbijl.
