{"id":497,"date":"2023-11-22T08:09:30","date_gmt":"2023-11-22T08:09:30","guid":{"rendered":"https:\/\/cookingpleasure.nl\/?p=497"},"modified":"2023-12-06T15:20:01","modified_gmt":"2023-12-06T15:20:01","slug":"stamppot-andijvie","status":"publish","type":"post","link":"https:\/\/cookingpleasure.nl\/?p=497","title":{"rendered":"Stamppot andijvie"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">INGREDI\u00cbNTEN<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>400 gr. gesneden andijvie <\/li>\n\n\n\n<li>1 kg. kruimige aardappelen <\/li>\n\n\n\n<li>300 gr. spekreepjes gerookt <\/li>\n\n\n\n<li>4 speklapjes zonder zwoerd <\/li>\n\n\n\n<li>250 ml. jus.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Neem voor stamppotten altijd een &#8216;kruimige&#8217; aardappel. Een bijzondere stamppot aardappel die in de wintertijd verkrijgbaar is, is de &#8216;Eigenheimer&#8217;. Wellicht vervelend om te schillen, maar wel de lekkerste aardappel voor een goede stamppot! Doe de spekreepjes in een kleine pannetje met anti-baklaag en doe er twee eetlepels water bij. Al roerend verhitten tot het water verdamd is en het spek in haar eigen vet begint te bakken. Kook de aardappelen gaar en bak op hoog vuur de speklapjes lekker bruin. Doe vervolgens ca. 300 ml water bij het braadvet van de speklapjes en zet het vuur hoog, voeg zout en peper naar smaak toe. Stamp de aardappelen met de rauwe andijvie (ongekookt zodat alle vitaminen bewaard blijven) en voeg scheutje bij scheutjes de jus toe en roer er de gebakken spekblokjes doorheen. Breng op smaak met zout &amp; peper.
