Mocht er nog een mossel openstaan, kan je zacht even op het aanrecht of zo tikken om te zien dat hij alsnog sluit. Verhit wat olijfolie in een ruime wok en fruit de sjalotjes, voeg alle andere ingredi\u00ebnten nu toe en roerbak 3 minuten, voeg naar smaak peper en zout toe. Verwarm in een ruime pan de witte wijn en voeg de mosselen toe &#8211; deksel op dan pan en zo&#8217;n 7 \u00e1 8 minuten koken totdat ze allemaal openstaan, af en toe goed schudden! Giet nu ca 200mI van het kook(mossel)vocht bij de wijnsaus en laat het wat inkoken.
