Snij de gekookte rode bieten ook in plakjes van ongeveer 2 millimeter, eventueel met behulp van de mandoline Steek met een ring uit 12 plakjes rode biet 12 mooi ronde ringen. Snij de rest van de rode biet in dunne julienne, blokjes , net als de ui en doe in een kommetje. Leg de 12 plakjes rode biet op een vuurvast plateau, besprenkel met \u00bd eetlepel van de olijfolie en brand lichtjes aan met een gasbrander. Bestrooi daarna licht met Fleur de Sel.
