Doe de boter met de olijfolie in een braadpan en fruit hierin de sjalotjes en de knoflook. voeg de konijnendelen toe en braad rondom bruin. Doe in een kleipot, ovenschaal of bijvoorbeeld tajine de fond, de port en roer hierdoor de tomatenpuree en leg vervolgens hierin de gebraden konijnendelen. Verdeel de tomaten, de wortel, de baconreepjes en 6 &#8216;gekneusde&#8217; teentjes knoflook over de schaal en leg hier bovenop het bouquet-garni van kruiden. Zet de schaal in de oven en stel de oven in op 150 graden. Niet vooraf de oven verwarmen!
