Roer de tomatenpuree er door. Snij ondertussen de groente grof. Blus af met rode wijn tot het vlees helemaal onder staat, voeg de groente, de laurier en het bouillonblokje met 250 ml water toe en maak van de tijm en de rozemarijn een mooi bosje met keukengaren, voeg dit ook toe. Laat met de deksel op de pan 3 uur stoven zodat het vlees mooi zacht is. Bind de saus door ontbijtkoek erin te verkruimelen en voeg net zoveel toe tot je de saus dik genoeg vindt.
