Gochugaru (Koreaanse chilipoeder) <br>32 gr. zoet rijstmeel <br>15 gr. suiker <br>2 lenteuitjes<br><br><strong><em>BELANGRIJK(!) <\/em><\/strong>Ga voor de Koreaanse chilipoeder naar een goed gesorteerde toko, gebruik niet zomaar chilipoeder.<br><br>Snij de Chinese kool in 4 stukken en strooi tusen iedere twee bladeren een beetje zout. niet teveel, maar \u00e9cht een beetje. Dompel ze vervolgens in een schaal koud water en draai ze iedere 30 minuten om, doe dit in totaal 1\u00bd uur. Spoel nu de zoutrestjes van de kool in koud water en breng de rijstmeel met 240 ml. water aan de kook. Blijf roeren tot de pap begint te borrelen (5 min). Voeg de suiker toe en laat zacht nog eens een paar minuten koken tot het doorzichtig is, laat afkoelen. Doe de knoflook, de geschilde gember, de vissaus, chilipoeder en de ui in een keukenmachine en pureer de ingredi\u00ebnten. Meng de puree nu door de pap tot er een mooie stevige saus ontstaat.
