Shiitake<br>300 gr. bieflappen<br>1 wortel<br>300 gr. verse spinazie<br>\u00bd courgette<br>2 eieren<br>3 lente uitjes<br>4 teentjes knoflook<br>Mirin of rijstwijn<br>suiker<br>sesamolie<br>sojasaus<br>sesamzaadjes<br><br><strong>MARINADE<\/strong><br>2 teentjes knoflook geperst<br>2 el. sojasaus|<br>1 el.sesamolie<br>1 tl. suiker<br>1 el. mirin. <\/p>\n\n\n\n<p>Doe de in kleine reepjes gesneden vlees en in reepjes gesneden shiitake in de marinade en laat 30 min. marineren. Snij de wortel en courgette in reepjes (julienne) of i.p.v. de courgette de spinazie even blancheren, spoelen onder koud water, overtollig vocht uitknijpen en op smaak brengen met zout en een el. sesamolie. Roerbak het vlees en shiitake in een wok tot het vlees mooi bruin is en zet weg. Kook ondertussen de mie in ca. 3 minuutjes. Doe nu de groente in dezelfde pan en roerbak (met de sappen van het vlees) zo&#8217;n 2 minuten en voeg de saus toe -&gt; saus: 2 el. sojasaus, 1 tl. suiker en 2 teentjes knoflook geperst. Zet het vuur lager en voeg het vlees en shiitake toe. Meng goed en laat nog even een paar minuutjes pruttelen en schep de mie er doorheen. Bak de losgeklopte eieren een weerskanten tot het bruin kleurt en snijd deze in smalle dunne reepjes.
